I made the cake! What a great recipe Chef Nancy! I posted it on my Facebook. This was the first time to make it and am very happy with it.Usually I do a test run and then perfect it. This time it came out really good the first time except for the sugar…i can take more time with that next time! i did bake it 35 minutes to what you see! Oven 330. Great recipe, for a 6 inch pan.

At the local Middl;e Eastern store the cheese counter guy sells small bottles of olive oil made from his brother's trees on the East Bank. I don't know how the brothers get it here but he keeps it under the counter and you have to ask for it. Unbelievable stuff--so many many thanks for this for telling me how best to keep such a precious gift!

We have QRs on our extra virgin oils that suggest to mentally treat high quality extra virgin like ketchup or soy sauce, kept away from the heat of the kitchen and on the dinning room table. We also suggest staying hyper aware of what is a vehicle for cooking and what is an ingredient in a finished dish. Stingy with the first, lavish with the second. To me large online retailers aren't as bad as olive oil (and vinegar) stores. These stores reveal larger industry problems, where consumers are doing the honest foot work to locate better oil in their communities, but often return home with mediocre products that have had their value added post production. (ie, flavourings, etc.). We are certainly in the 'white flavour/red flavour' wine phase of olive oil, where the average consumer is just now earning to avoid supermarkets, the same way they no longer see convenience stores as great places to buy the best wine. Comparing oil to wine is helpful in another way too: find a person's name, a date and cultivar on the label and your odds soar for having a good experience. When oil or wine become commodities, the consumer is the loser.
