Dear Nancy, Great recipe. Thank you. I prefer potato salad without mayonnaise. I made one for yesterday’s picnic with Samin Nosrat’s Lemon Miso Dressing.
Oh MY GOD!! You are not serious! This is the best potato salad in the universe! I am making it instantly. What a gorgeous idea! You are an ispired cook, Nancy J. xox
I must make this potato salad! I do, so much enjoy a vinaigrette dressing. I've been making a favourite of ours for years...lemon juice, olive oil, garlic. Forget Russets, new, waxy potatoes makes wonderful potato salad, IMO. Happy Independence Day, no matter what!
This is the best-sounding potato salad ever! I have tried the America's Test Kitchen trick of sprinkling the warm potatoes with vinegar-based pickle brine, but a full flavored vinaigrette sounds even better, although I know J. would taste it and say 'where's the mayonnaise?' The worst potato salad I ever tasted was my former sister-in-law's. It was cold mashed potatoes with chopped green onions and Miracle Whip.
I always make potato salad with some form of vinaigrette. But I've never thought to be fancy in the cooking of them. I just do boiling water with some fresh mint and salt, and then drain them when barely done and let them cool to firm before cutting them up. I add loads of chopped fresh herbs from the garden to my vinaigreete, so the salad loks green-speckled and deliciously messy and aromatic, if you know what I mean.
I hope you USians survive the current catastrophes.... hugs
