I made both of these this past weekend and they were both home runs! The pancakes were so tender and satisfying without being heavy, and the cake was the best olive oil cake that I’ve baked. Those recipes sound delicious, especially that blueberry-almond-olive oil cake. Yum! 😋 As a low-GI enthusiast, I'd suggest swapping out some of the all-purpose flour for almond flour or coconut flour to lower the glycemic impact. And maybe use a natural sweetener like stevia or monk fruit instead of sugar. Small tweaks can make a big difference! I actually covered some similar low-GI baking swaps in my newsletter recently. There must be something in the air! Because I was off the internet in places where, can you believe it, there is no internet, I pre-wrote and scheduled this week's Tabled with its recipe for oil cake - though I used walnut oil. Can't wait to try yours.
Thanks, Nancy. Blueberries appear twice in the ingredients list for the cake, once at the beginning and then again at the end. I assume that only 1 1/2 cups are needed?
Thanks for noticing. I’ll try to correct. And yes 1 ½ cups should be plenty but it doesn’t have to be an accurate count. You could easily go up to 2 cups and have a VERY blueberry cake. Three cups might be stretching it, however!
