Apologies again! Another faithful reader has pointed out that in my eagerness to get the Olive Oil post out, I failed to mention the size of the cake pan or tin. I have made it in both an 8-inch and a 6-inch tin and works well in either. The 6-inch tin is perfect for very small households. And of course it’s easy to just double the ingredients to make a larger cake if you wish.
And I usually bake pretty much same recipe in a loaf tin cos it's easier to store n slice. Very adaptable recipe. Lovely post btw - quite agree about Greek olive oil. US is interesting. And olives now ripen on trees in London.
